Sof's banana bread recipe (vg, gf)


3 large black bananas (I like to keep very black bananas in the freezer until I have enough)

75ml of olive or coconut oil

225g of plain or gf flour

100g of sugar (I use whatever sugar I have available)

3 heaped tsp of baking powder

3 heaped tsp of cinnamon (I love cinnamon!)


  • STEP 1

    Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork (for best results use very black bananas that have been frozen and defrosted when you have enough), then mix with 75g olive or coconut oil and 100g any sugar.

  • STEP 2

    Add 225g plain flour (or gf flour), 3 heaped tsp baking powder and 3 tsp cinnamon to a bowl and mix well.

  • STEP 3

    Bake in an oiled, lined bread loaf tin for 20 minutes. After 20 mins, cover with tin foil.

  • STEP 4

    Bake for another 20 minutes, or until a skewer comes out clean.
